How do I add a variation of my model?

I want to make an orthogonal view of my model and for that I want to add a variation of my building without a roof to take a render from its “top” view, but I can’t find the option or it doesn’t have it. If you don’t have it, I’d like to suggest it to be added.

I would also like to know how I do a high lens aperture cut, it only accepts up to 100 and does not cut my building roof in the top view.
